beach cottage surfer boy stew chorizo recipe

G?day Beach Cottage girls!

Do you love yourself a little Too Easy fix it and forget it meal that you can sling in your slow cooker / crockpt, or shove on the stove top and do nothing else to?? Perhaps you have a hungry surfer boy or six in the house that you need to feed?

Well let me tell you, if there is one thing I can write about on this here blog, it?s throwing things in your slow cooker and coming out the other side looking very very good.

?

beach cottage recipe easy stew

This recipe has been with us for ages now ? it came about though through being faced with leftovers from a roast, a sad and lonely sausage, a few past their best carrots fading fast and more cans of pulses that one woman in an old cottage somewhere in a cottage Down Under could ever want or indeed, need.

I decided that the only thing for it was a dump & go in the old crock pot and hope for the best.

beach cottage blog recipes

I have spent a lot of time learning this craft of slow cooking?from the early days when I pulled out that little lonesome crock pot from the back of the cupboard when Beach Cottage Baby number 3 was a few months old and we could not face another plate of pasta and found many a recipe calling for a can of mushroom soup, to nowadays where I have up my sleeve a plethora of things that I have dabbled and fiddled with until I have got it right.

easy simple crock pot slow cooker recipe

I was, recently, on a cookery book reading marathon, there may or may not have been a bathtub and white subway wall tile involved.? While reading I was aghast to read one of the writers abhorring the use of one of these gadgets in his kitchen.? Dude?? Hello?!

Clearly, clearly, clearly, he had never sat on a tiled kitchen floor in the middle of an English village, about the month of August with a huge 10lb third baby and a husband out for 14 hours a day in floods of head-banging tears.? Clearly not.

But I dear Beach Cottage girls have and it is with this insight that I present you with another Too Easy Surfer Boy recipe.

beach cottage recipe collage

Make this for the males in your house, or indeed when the girls want to snuggle up on the sofa with comfort food and watch Meryl Streep movies and all will be so very good in the world.

?

?

2 x cans chickpeas

1 x can tomatoes

2 cups cooked chicken

2 x tbsp balsamic vinegar

1 to 2 cups chicken stock/broth

1 x large chorizo sausage

2 medium onions

2 carrots

handful fresh garden herbs

3 cloves garlic

salt & pepper

cheese

bread

(serves 4-6)

1. add all to your crock pot / slow cooker

2. cook on high 4 ? 5 hours

3. serve topped with cheese & crusty bread

**Beach Cottage Recipe Notes

*adjust the chicken stock to your needs (ie how much time it will be cooking for) and your slow cooker hence why I have put 1-2 cups ? my new slow cooker cooks hotter than my old one and I find I am adding more liquid, best always to start with less then you can add more, but if it looks too liquidy (pls no grammar/spelling emails) just move the lid ajar and let some evaporate off?? *any vinegar will do but balsamic is good *you might want to lose a clove of garlic? *I often, especially if I feel like annoying my kiddos, add a teaspoon of dried chilli? *any old veggie sitting in the bottom of the fridge can go in here? * on the stove top / hob this works after an hour or so, which plausibly means that it can be hurried together when you get in, left while you do all the Arsenic Hour stuff and come back to it ready to go, but really a couple of hours is best *by large chorizo sausage I mean one that is about 6 inches long, let?s not get rude here *garden herbs to me mean anything that is thriving under the Aussie sun, here I threw in Oregano, Italian parsley, Thyme and a sniffle of Basil? *I mostly make this on Tuesdays with the leftovers and the bones from Sunday?s roast chicken, I throw the bones in a pot for the stock and use the chicken for the stew

There is not fancy schmancy here, the recipes I throw in my crock in the middle of the day when all in the world is good, will not, I don?t believe, win me any awards, indeed will not catapult me to the dizzy heights of tv reality fame on Masterchef or the like.

easy stew recipe

But, they will do many a thing.

They will mean my family think I am an awesome cook, which I am by far not, they will also think I slave over them, which I so do not (which in turn allows me some pretty good cards to present when needing to blackmail anyone for anything) and more importantly, in one big old fell swoop the recipes I pop in that little beauty, time and again, week in, week out, mean that all is done when we walk in the door from sport and that there is no clear up save throwing one big ole pot from one side of the kitchen counter to the dishwasher on the other.

Does a double whammy like that float my little Beach Cottage boat?

Oh yes, I do think so.

The Ethical Component of Business | Real Estate Investing ...

???? Business owners face many struggles on the road to success. They must make decisions on a daily basis that could alter the likelihood of survival in today?s market. Some of the decisions are straight forward in nature and include things such as the business product or service, location of operation, the size of the target market (local, national, global, or other), and identifying sources of capital. Each of these decisions forces business owners to weigh pros and cons regarding benefiting the business, shareholder needs, legality issues, geographic concerns and other easily discernible matters. The decisions that tend to be more difficult in nature are the same decisions that seem to offer less formal guidance. These decisions involve ethics of business. Business owners at one time or another are often forced to identify a code of ethics for application in their daily business operations. Typically, at least some part the code of ethics designed for the business will vary from an individual?s personal ethics. A code of ethics is necessary for business owners and their employees to ensure everyone knows and understands which behavior is acceptable as right and wrong as it pertains to the individuals and the business as a whole.

? ??? The idea of good ethics is generally expected in the business landscape of the United States. A popular term used in conjunction with the idea of good business ethics is accountability. Accountability refers to the fact that every ?person is responsible or answerable to someone.? (Robinson, 2009? Another common term with regard to ethics is liability. Liability insists that every person ?is responsible for something or someone.? (Robinson, 2009) By looking at these two terms, the importance of good business ethics can be identified as something that affects coworker-manager relations, as well as customer-client relations. Because ethics can involve so many relationships in business, practicing ethics that support a prosperous business is essential.

???? When managers have employees behaving unethically or opposing behaviors that ?enjoin virtues of honesty, compassion and loyalty? (Velasquez, 2008) the resulting internal conflicts could cause disruption to the organizational culture and overall productivity. Personal conflicts among co-workers and trust issues with management could hamper workflow and communication. Likewise, unethical behavior involving customers and the business could result in lost sales, lack of referrals, and cancelled accounts. Information from the Mark Kula Center for Applied Ethics at Santa Clara University indicates that often customers who feel they are being treated unfairly or feel that businesses are withholding vital information and keeping secrets believe that unethical behavior is occurring. Additionally, questions of morality and suspecting a business or one of its representatives is doing something immoral can lead to questioning whether good business ethics of an organization are wavering. (Velasquez, 2008) An example of wavering business ethics involves Baltimore Mayor Sheila Dixon who was recently convicted for ?fraudulent misappropriation for improperly using several hundred dollars in gift cards,? as stated in The Wall Street Journal. (McKinnon & Radnofsky, 2009) While the conviction obviously indicates a violation of law, the ethical concerns of the situation are overwhelming and common. Government officials, law enforcement, and any public servant who works in a position of authority and accepts a gift of monetary value can expect to be faced with questions regarding ethics. One of the primary concerns is favoritism to whoever provides the gifts. (Davis, B, 2009) The gifts can be in exchange for anything to include fixing a ticket, awarding government contracts for various products and services, ignoring legal infractions, providing jobs, influencing decisions, and appointing certain individuals to positions of authority in the community. Financial gain seems to be one of the most prevalent ethical battles in America today. In a struggling economy where unemployment is quite high (www.bls.gov/lau/) it should not be a surprise that where ethical concerns exist, it usually revolves around money. In the case of Mayor Dixon, money was a major component and motivator in her case.

? ??? Although financial issues are often part of ethical cases, other matters can be involved as well. These often vary by occupation. For example, in construction, substandard materials may be used because they happen to be available at the right time. In the medical field, patients without health insurance may be required to pay higher charges for the same services as those with insurance. In retail, managers may make a 0 purchase to meet their monthly quota or win a contest, only to return the item later. In an office, an employee might work on company time and utilize company resources to do work for their second employer. These instances are just a few of the unethical possibilities that can occur in business. Because of the potential for unethical behavior in so many places, businesses should clearly define what is acceptable and unacceptable. This code of ethics, as I named it earlier, should be detailed and include examples for clarity. For instance, employees may not be permitted to spend more than on any gift for a manager. Employees of state and local governments may not accept gifts from affiliates valued over . Employees may use company equipment for limited, personal use, not to exceed a value of a month and only on personal time. Managers may not inflate their sales by making purchases and posing as customers. The code of ethics each business should create needs to be specific for that business and cover any conceivable situation. All employees should then be made aware of the ethics, provided training, and annually updated on all ethical business practices.

????? Business ethics is an unavoidable issue for any organization operating in the United States. Additionally, ethical beliefs can vary globally and businesses that operate in other cultures need to address the best ethical practices in those environments as well.??Ultimately, best practices and ethical standards for any business should be reflected by the behavior of each employee as outlined by the organizations they represent.? In so doing, fair treatment, ?honesty, compassion, and loyalty? (Velasquez, 2008) will hopefully keep cultures at work productive and customer relations profitable.

Researchers ID unique geological 'sombrero' uplift in South America

Friday, October 12, 2012

Scientists at Scripps Institution of Oceanography at UC San Diego have used 20 years of satellite data to reveal a geological oddity unlike any seen on Earth.

At the border of Argentina, Bolivia and Chile sits the Altiplano-Puna plateau in the central Andes region, home to the largest active magma body in Earth's continental crust and known for a long history of massive volcanic eruptions. A study led by Yuri Fialko of Scripps and Jill Pearse of the Alberta Geological Survey has revealed that magma is forming a big blob in the middle of the crust, pushing up the earth's surface across an area 100 kilometers (62 miles) wide, while the surrounding area sinks, leading to a unique geological phenomenon in the shape of a Mexican hat that the researchers have described as the "sombrero uplift."

Since the magma motion is happening at a great depth and at a fairly slow rate?the earth's surface rises at about a centimeter per year or roughly the rate fingernails grow?there is no immediate danger of a volcanic outpouring, the researchers said.

The details of the study, which was funded by the National Science Foundation, are published in the October 12 issue of the journal Science.

"It's a subtle motion, pushing up little by little every day, but it's this persistence that makes this uplift unusual. Most other magmatic systems that we know about show episodes of inflation and deflation," said Fialko, a professor of geophysics in the Cecil H. and Ida M. Green Institute of Geophysics and Planetary Physics at Scripps.

The researchers have attributed the observed steady motion and sombrero-shaped deflection of the earth's surface to a large blob of magma, called a "diapir" in geological terms, forming on top of the Altiplano-Puna magma body. Diapirs have been studied using geologic records in rocks frozen many millions of years ago, but the new study is the first to identify an active magma diapir rising through the crust at present day.

Fialko said a similar uplift phenomenon is occurring near Socorro, New Mexico, but at a much lower rate.

"Satellite data and computer models allowed us to make the important link between what's observed at the surface and what's happening with the magma body at depth," said Fialko.

Fialko said the sombrero uplift could provide insights into the initial stages of massive magmatic events leading to the formation of large calderas. Such "super-volcano" events erupt thousands of cubic kilometers of magma into the atmosphere and can affect local and global climates. Compared with the Icelandic volcano eruption in 2011 that spewed large amounts of ash into the atmosphere and disrupted global air travel, Fialko said, a super-volcano event would be thousands of times greater.

"Those were truly disaster-type events," said Fialko. "Fortunately such events haven't happened in human history, but we know they did happen in the Altiplano-Puna area in the past."

Japan utility agrees nuclear crisis was avoidable

TOKYO (AP) ? The utility behind Japan's nuclear disaster acknowledged for the first time Friday that it could have avoided the crisis.

Tokyo Electric Power Co. said in a statement that it had known safety improvements were needed before last year's tsunami triggered three meltdowns, but it had feared the political, economic and legal consequences of implementing them.

"When looking back on the accident, the problem was that preparations were not made in advance," TEPCO's internal reform task force, led by company President Naomi Hirose, said in the statement. "Could necessary measures have been taken with previous tsunami evaluations? It was possible to take action" by adopting more extensive safety measures, the task force said.

The task force said TEPCO had feared efforts to better protect nuclear facilities from severe accidents such as tsunamis would trigger anti-nuclear sentiment, interfere with operations or increase litigation risks.

The admissions mark a major reversal for the utility, which had defended its preparedness and crisis management since the March 2011 tsunami. The disaster knocked out power to the Fukushima Dai-ichi nuclear plant, leading to the meltdowns, which forced massive evacuations and will take decades to clean up.

The statement was released after TEPCO held its first internal reform committee meeting, led by a former U.S. nuclear regulatory chief Dale Klein. His five-member committee oversees the task force's reform plans, which aim to use the lessons learned at TEPCO's Kashiwazaki-Kariwa plant in northern Japan. The cash-strapped utility wants to restart that plant, but TEPCO officials denied the reform plans are aimed at improving public image to gain support for the plant's resumption.

Investigative reports compiled by the government and the parliament panels said collusion between the company and government regulators allowed lax supervision and allowed TEPCO to continue lagging behind in safety steps.

That company had said in its own accident probe report in June that the tsunami could not be anticipated and that the company did the best it could to bring the critically damaged plant under control, although there were shortfalls that they had to review. TEPCO bitterly criticized what it said was excessive interference from the government and the prime minister's office.

The rise of China and India bodes well for science, says British Royal Society president Paul Nurse

Paul Nurse knows viscerally what it takes to build a productive scientist. Raised by his grandparents?a handyman and a cook?in class-conscious England, Nurse went on to do pioneering research in DNA and cell division, for which he won a Nobel Prize in 2001. In 2003 he was named president of the Rockefeller University in New York City, and in 2010 he became president of the British Royal Society, which makes him something of an expert in the cultural differences between European and North American scientists. He splits his time between London and New York, where he still does laboratory research. Nurse talked with Scientific American about the changing face of global science.

KENNEBUNK, Maine (AP) ? Last-minute legal wrangling made it unclear Friday whether curious residents would find out who in this seaside town stands accused of giving business to a fitness instructor charged with running a prostitution operation out of her Zumba studio and a small office.

A state judge declined to stop the release of the names but a lawyer was filing an appeal of that decision Friday.

Alexis Wright, a 29-year-old fitness instructor from Wells, has pleaded not guilty to prostitution, invasion of privacy and other charges for allegedly accepting money for sex and secretly videotaping her encounters. Her business partner also has pleaded not guilty.

Searches of Wright's studio and office turned up video recordings of sexual acts, billing information and meticulous records about clients, according to court documents.

Based on that information, Kennebunk police have been begun issuing summonses to Wright's johns on misdemeanor charges of engaging a prostitute. The first names were to be released Friday, but the police department was awaiting word from the courts before proceeding, said Lt. Anthony Burpee.

Lawyer Stephen Schwartz was appealing a decision by a District judge in Biddeford, who declined Thursday night to intervene and stop the release of identities.

He also was asking permission to take the case to Superior Court in Portland, where a judge was handling the case against Wright and business partner, Mark Strong Sr., a 57-year-old insurance agent and private investigator from Thomaston, who has pleaded not guilty to 59 misdemeanor charges.

"We believe very strongly that their names ought not be released. The mere releasing of their names will have devastating consequences in a case in which the government, we believe, will have great difficulty proving," Schwartz said.

The existence of the list of johns has fueled speculation about who is on it. Residents have said they've heard it could include lawyers, law enforcement officers and some well-known names.

Strong's attorney, Dan Lilley, has said he has a list of or more than 150 people who were alleged customers, but that he wouldn't release the names unless they're called as witnesses if the case goes to trial.

Allison Ackley, who participated in Wright's Zumba class, said she had no idea that Wright was allegedly leading a double life.

"She was very professional. She was an amazing dancer and she held a good class so I liked going. I thought she was a little, not risque but a little flirtatious, with a couple of the male participants in the class. But it's Zumba. You're there to have fun. I didn't think anything of it."

The case has rocked this small town, which is well-known for its ocean beaches, old sea captains' mansions and the neighboring town of Kennebunkport, home to the Bush family's Walker's Point summer compound.

"It'll be interesting to see who's on that list because we're hearing that there are selectmen, there are policemen, that there are firemen ? people that we're going to know in town," said local resident Elaine Nicholson. "So everyone is, like, waiting with bated breath."

Soccer-Scheduling issues irk Asian sides fighting on two fronts

SINGAPORE, Oct 11 (Reuters) - Jordan coach Adnan Hamad has

bemoaned scheduling conflicts as his attempts to steer the side

through to a first World Cup finals were complicated by having

to also negotiate an Asian Cup qualifying campaign.

The Asian Football Confederation (AFC) conducted the draw

for the 2015 Asian Cup qualifiers in Australia on Tuesday and

Jordan were one of seven teams involved that are also still in

contention for a place at the World Cup in Brazil in 2014.

Japan and South Korea avoided Asian Cup qualifying courtesy

of being in the top-three finishers at the last Asian Cup, along

with runners-up Australia, who will host the 2015 tournament.

But Jordan, Qatar, Oman, Iran, Lebanon, Uzbekistan and Iraq

will all be required to handle overlapping campaigns.

The Asian Cup matches will begin in February and run through

to March 2014 with the top two sides from each group advancing

to the finals. The World Cup qualifiers are ongoing with the

final match date scheduled for June 18 next year.

Jordan currently hold one of the top-two automatic

qualifying berths for Brazil after their shock 2-1 home win over

Australia in Group B last month and travel to face bottom-placed

Oman next week.

In the regional qualifiers, Jordan were drawn with Syria,

Singapore and Oman but Hamad was only concentrating on the

fourth round World Cup clash in Muscat.

"We have a very good to chance to reach the (Asian Cup)

finals, but there is a problem as some of the matches are going

to be played at the same period with the World Cup qualifiers,"

Hamad told the Asian Football Confederation.

"We must focus now on the upcoming two matches in the World

Cup qualifiers, then we will start thinking about the Asian Cup

qualifications. We must give it (the World Cup qualifications)

full attention as we want to reach the finals."

Qatar were drawn alongside Bahrain, Yemen and Malaysia in

Group D of Asian qualifying but their Brazilian coach Paulo

Autuori shared Hamad's view of only thinking about next

Tuesday's World Cup clash.

Qatar are currently third in their five-team World Cup group

behind South Korea (seven points) but level on four points with

Iran and Lebanon with the Uzbeks two points back in last.

"We only think about the match with Uzbekistan in World Cup

qualifying now," Autuori told the AFC. "We will start thinking

about the Asian Cup qualifiers after the Uzbekistan match."

Lebanon have enjoyed some rapid progress under German coach

Theo Buckner and are competing in the fourth round of World Cup

qualifiers for the first time.

Expected to be the whipping boys of Group A, Lebanon stunned

Iran 1-0 last month and Buckner talked up his side's chances of

reaching the Asian Cup finals after being drawn alongside

Thailand, Kuwait and Iran, again.

"We must work very hard to keep the same level we reached

with the national team," Buckner told the AFC.

"Our chances are there to reach the Asian Cup, but we must

prepare the team in a good way to make them capable of playing

the World Cup qualifications and Asian Cup qualifying matches at

the same time."

No charges in alleged Lohan hotel dispute

Kristina Bumphrey / AP file

By Shimon Prokupecz, WNBC

Updated 7:51 a.m. ET Monday:?A 25-year-old man who met Lindsay Lohan at?New York City night club won't face any charges after an alleged incident early Sunday in which the actress told police he?assaulted her in her Manhattan hotel room.

According to law enforcement officials, Lohan told police she got into an argument with a man she brought to her room after meeting him at 1 Oak in Chelsea.

The argument was allegedly over photos the man took of Lohan on his cell phone while they were in her 15th floor room at the W Hotel near Union Square with some of Lohan's friends.

Police have identified the man as Christian LaBella of California.

Lohan told detectives that at around 4:30 a.m. she saw photos of herself on LaBella's phone, confronted him about the them and took his phone. LaBella then threw her on the bed causing scratches on her hands, police sources said.

Lohan ran out of the room and down the stairs of the hotel, but at some point decided to head back upstairs to her room. When LaBella saw her again, Lohan told police he attacked her, choking her, throwing her to the ground and climbing on top of her.

A friend of Lohan's who was with her at the time was able to pull LaBella off her, and Lohan then pulled the fire alarm for help. LaBella took off down the stairs, but police arrived before he was able to leave the hotel and took him into custody.

Lohan refused medical attention and did not go to a hospital.

LaBella was initially charged Sunday afternoon with two counts of misdemeanor assault and two counts of harassment, but after further investigation police dropped the assault charge.

E! News confirmed late Sunday night that the harassment charges were also dropped against LaBella.?The New York Police Department said investigators quickly determined that no crime was committed.

"It's both distressing and outrageous ... and there should be a consequence for that," Lohan's rep Steve Honig told E! News.?

LaBella has since filed a harassment complaint against Lohan.

According to his YouTube page, LaBella ran for president of his business fraternity at the University of San Diego and was a child actor. In police paperwork, LaBella listed his employer as Illinois Congressman John Shimkus.

"While no one from Congressman Shimkus? office has been contacted by Mr. LaBella following his arrest, he has been an employee in the Congressman?s Washington office," a spokesman for Rep. Shimkus said in a statement Sunday. "Obviously, the Congressman does not condone his actions. ?As this is a legal matter for Mr. LaBella, the Congressman nor his office will make further comment.?

The incident comes as yet more drama for the "Liz & Dick" star.

Earlier this month, she was arrested and charged with leaving the scene of an accident after allegedly clipping a pedestrian with a borrowed Porsche outside a Chelsea club in New York City.

And last Sunday she was rushed to a New York City emergency room for a respiratory problem. The actress suffered complications due to asthma.

Lohan also remains on probation for a 2011 case in which she pleaded no contest to taking a $2,500 necklace without permission from an L.A jewelry store. Lohan no longer has to report to a judge -- she completed a counseling and morgue cleanup duty program -- but she could face jail time if she is charged with another crime.

CUA rolls past Misericordia 5-1 - Catholic

September 30, 2012

DALLAS, Pa. ? The CUA offense erupted for five goals on Sunday in a 5-1 win over Misericordia.? The No. 8 Cardinals scored twice in the first half and then broke things open with three more goals after halftime.? With the win CUA moves to 7-3, while Misericordia drops to 2-9.

The Cardinals actually trailed in this one after the Cougars received a goal from Lindsay Hischak 2:15 into the game.? Terra Hall assisted on what was Misericordia's final goal of the day.

CUA's defense tightened up from that point, holding Misericordia to only one shot for the rest of the game, and the offense went to work as well, with Colleen Harwood scoring the first of her two goals at the 16:03 mark to tie things at one.

10 minutes later, Harwood assisted on Hayley Wright's goal to give the Cardinals a lead they would not relinquish.

Just 22 seconds into the second half, Kiera McGovern upped the lead to 3-1 when she scored.? Harwood registered her second assist of the day on the goal.

The Cougars' only shot of the second half came from Hall following a penalty corner, but CUA's Megan Comunale was there for the save to keep the lead at two.

With a little over 10 minutes remaining, CUA was awarded three consecutive penalty corners and the Cardinals were able to take advantage when Harwood netted her second goal to make it 4-1.

Wright assisted on Harwood's goal and Harwood then returned the favor as Wright sealed the win with a score at the 65:37 mark.

CUA finished the day with a 29-2 advantage in shots and a 22-2 lead in penalty corners.?

CUA remains on the road for its next game, making the short trek to Towson, Md. to face Goucher on Wednesday.? Start time is set for 4 p.m.

BYU football: Cougars' defense continues to dominate

PROVO ? Over the past nine quarters, including Friday's 47-0 shutout of Hawaii, BYU's defense has not allowed an opposing team to score a single point.

The last time the Cougar "D" yielded any points was late in the third quarter at Utah ? and that came on a 39-yard touchdown pass one play after a BYU turnover.

"Defensively, these guys just keep rolling along and playing consistently, and it's hard to score on them," said coach Bronco Mendenhall, who also serves as the Cougars' defensive coordinator. "As long as they do that, even the games we dropped this year, we had a chance right to the very end, last play. I think that's the way the rest of the season could be, based on the more difficult opponents that we play."

Indeed, things could get tougher starting next Friday (8:15 p.m. MDT, ESPN), when the Cougars host Utah State.

For now, BYU has allowed just four touchdown drives this season, two against Weber State (77 and 75 yards) and two against Utah (17 and 39 yards). The offenses for Washington State, Boise State and Hawaii never reached the end zone. While those offenses have struggled this season, they are coached by brilliant offensive minds ? Mike Leach, Chris Petersen and Norm Chow, respectively.

Can the BYU defense keep on rolling?

"They can get better. I'll tell them they can get better, and they know that," Mendenhall said. "We have really high expectations. It's a fun group to be around, and we have good players. It's a fun group to coach because they're not only willing, but they have good ability."

"We're a good defense, but we know we could do a lot better," said defensive lineman Ezekiel Ansah, who recorded five tackles, one pass breakup and one quarterback hurry against the Warriors. "We're not going to stop putting in extra effort. We're going to keep working hard."

It's been nearly two years since Mendenhall took over the reins of the defense after firing Jaime Hill in the wake of a 31-16 loss at Utah State ? and the results speak volumes about what that change has meant to the defense.

"I take great pride in it. It's what I like to do," Mendenhall said. "There's a lot of things, being the head coach, that maybe I'm not as much suited to. But I like coaching defense and I like coaching football ? being in the room with the players and sharing in their joys and successes. It reminds you why you're coaching in the meantime."

Smith, Morris, Florence have huge QB days

West Virginia's Geno Smith, Baylor's Nick Florence and Miami's Stephen Morris were quarterbacks-gone-wild Saturday.

And each of them did something no major-college passer had done since 2009.

Smith threw for 656 yards and eight touchdowns against Baylor ? the game where Florence threw for 581 yards and five scores. And in the Hurricanes' win over North Carolina State, Morris threw for a school-record 566 yards and five touchdowns.

Combined, the trio's total passing was the equivalent of 1.02 miles.

According to STATS LLC, the last quarterback with at least 550 yards and five touchdowns in a game was Houston's Case Keenum against Southern Mississippi on Oct. 31, 2009.

Before that, the last do it was Texas Tech's Graham Harrell against Oklahoma State on Sept. 22, 2007.

10 World-Changing Innovators for 2012

Leadership Award

Innovator: Elon Musk, CEO of Space Exploration Technologies and Tesla Motors

Elon Musk, the entrepreneur, is having a good year. His companies, Space Exploration Technologies (SpaceX) and Tesla Motors, both hit historic milestones. SpaceX became the first private company to build, launch, and operate a spacecraft that docked with the International Space Station. Tesla unveiled the world's first premium all?electric sedan to positive reviews at a price of $49,900 (after rebate).

Elon Musk, the man, has every reason to be nervous. At 41, the South African?born billionaire has staked his fortune on businesses that could reshape the future?or implode spectacularly. After creating and selling the Internet payment system PayPal, Musk turned his attention to industries he felt could enhance humanity's potential: electric cars and affordable spaceflight.

Musk vs...

Credit Card Companies

In 1998 Musk co-founded the Internet payment service PayPal. The new company created a secure transactional platform that avoided the hassle and high fees of traditional credit card accounts, democratizing commerce for online auctions. Ebay bought the company in 2002 for $1.5 billion.

Big Auto

Since his college days in the mid-1990s, Musk has wanted to kickstart the development of electric cars. In 2003 he co-founded Tesla Motors with an investment of $37 million. The small startup trailblazed the use of lithium-ion batteries in cars; automotive giants like General Motors soon followed suit in cars such as the Volt.

The Spaceflight Industry

In the post-shuttle era, NASA has looked to outside companies to design and build spacecraft for the next era of exploration. Musk's Space Exploration Technologies responded with rockets and vehicles that are far less expensive than anything the space agency has ever flown.

Baptist Missionary Women: Missionary Monday - A Day in the Life of...

Please meet Laura Consford and her family...
?

?

Is there such a thing as a "typical" day on the mission field? It seems there is always something unexpected that comes up, but we just learn to go with the flow.

We are the Consford family, currently serving in Ghana, West Africa. Joe and I first arrived in Africa in 2004. At that time, we did not have any children. We now have three children, Gilbert (7), Danny (5), and Bonnie (4). Each addition to the family has brought a little more excitement. There never seems to be a dull moment around our house. Our children say some of the funniest things. I do not know where they come up with some of their great ideas.

Here in Takoradi, Ghana, we have the unusual opportunity of being able to put our children in a Christian school. Another Baptist missionary started a school several years ago. They use the A Beka DVDs and have a teacher and a monitor in each class. Last year was the first year that our children attended there. They were a little overwhelmed at first since they were the only white children in a school of 250 students. They have just started their second year. They were all excited for school to start again. The school is only four miles from our house, but it sometimes takes almost an hour to get there due to traffic and road conditions.

When school is in session, a "typical" day begins at 5:30 for me. I get up, make breakfast, and get lunches packed to send to school. After I get Joe and the kids out the door for school by 6:45, I have time for my devotions and computer time. Then, I get started on my chores for the day - dishes, laundry, cleaning, baking, etc. Filtering water is also a daily occurrence. We have well water and rain water as our main water sources. So, the water has to be filtered before using it for cooking or drinking. At one point, we all got sick from the water. Since that time, we have stepped up our filtering system. Our water goes through a chlorination process and then four different filters before we drink it, and it takes constant care to keep the water moving along to the next step.

When the children are out of school, they are still up early, usually around 6:00. I still have all of the same basic things to do. They are old enough now that they can help out around the house. They clear the table, wash the dishes, sweep the floor, etc.

As is the case on many mission fields, there are not many "quick fix" type things available. So, meal preparation takes a little longer sometimes - making your own tortillas, soups, pizza dough, etc.

When the children get home from school, they usually swim or play outside for a while to get some of their energy out. They do not play much during school. They also like to help me make supper.

After supper, we like to play a game as a family. I grew up playing board games, and I still enjoy playing games. The main thing we are working on right now is not getting upset when we lose; it seems that someone always ends up in tears.

We have had "load shedding" recently. The idea is for the power to be off in different areas at different times, but the power in our area seems to be the first one to go off. We live up on a hill. Sometimes at night, the power is off in our area, but we can see lights all around us. We do have a generator, which is a necessity to keep food from spoiling and to keep the fans turning. It is a little frustrating at times because we never know when we will have "load shedding" or how long the power will be off. We do have a gas stove; at least the food keeps cooking when the power goes off. The other night, the power went off during supper. Bonnie said, "I guess we are having a candle breakfast." We sometimes get behind on the laundry because the generator will not run the washing machine. If the power is on, the washing machine is in constant use. That is better than doing it by hand. I know that I have it much easier than missionaries did years ago or than modern-day missionaries who are in very remote places.

Joe stays busy with sermon preparation, visiting, and transporting the children to and from school during the week. On Saturday mornings, he goes visiting. We also have Bible Clubs on Saturday mornings in different neighborhoods.

On Sunday mornings, I work with the children seven years old and under. I usually have around twenty-five in my class. Most of the children who have not been to school yet do not speak English. I usually have a Fante-speaking helper in my class. On Sunday nights and Wednesday nights, I play my clarinet as accompaniment during the services.

I usually go into town with Joe one day during the week to go grocery shopping. We have a couple small stores that carry refrigerated items. There is also a large market area that has a variety of items - fruits, vegetables, fabric, etc. We also buy some things in bulk at the market - flour, sugar, powdered milk. After we get our shopping done, we usually eat lunch somewhere before heading home. We do not have any fast food restaurants in our town, but there are some good places to eat; it just takes a while before the food comes.

My next goal is to learn Fante, the tribal language in our area. We have had difficulty finding a teacher. My husband studied Fante for six months when we were in Ghana a few years ago. (We started out in Ivory Coast but had to leave several times due to civil war.) So, he knows a lot more than I do. We learned French before going to Ivory Coast, but I have never studied a tribal language before.

Thank you for the opportunity to share our daily happenings here in West Africa. We have a blog which started out as a daily e-mail to family and friends to let them know what happens each day. You are welcome to follow along at http://consfords.blogspot.com/.
